8.5.1

Preliminary steps to enable hazard analysis

ClauseUnchanged titleRetrieved 2026-10-19Last updated: 2026-10-19

The requirement that applies today

Before the hazard analysis, the food safety team collects, maintains and updates the documented information it needs. The current edition sets out the detail in subclauses: the general preparation, the characteristics of raw materials, ingredients and contact materials, the characteristics of end products, the intended use, and the flow diagrams and process descriptions, including the on-site confirmation. The draft contents name the parent clause and keep the same position in the structure.

What the draft does

Unchanged title: The public contents keep 8.5.1 at the same number and title. The current edition numbers its subclauses 8.5.1.1 to 8.5.1.5; the public contents page prints the parent only. No change to the requirement is shown.

Why this clause matters

The quality of the hazard analysis is capped by this preparation. A team that starts from a blank hazard table and no product or process description will produce a generic analysis. The parent page is the place to see the five inputs together; the subclause pages carry the detail.

Suggested evidence to discuss with your auditor

For 8.5.1, these are the artefacts we suggest discussing with your auditor. The standard publishes no evidence list, so this is our reading, not a requirement.

  • A preparation file with the legal requirements, product list and process list
  • Current material and product descriptions, and the intended use for each product
  • Flow diagrams confirmed on site, with the date and the people who walked the line

Where systems usually fall short

  • A hazard analysis that starts from last year’s table
  • A flow diagram drawn at a desk and never checked on the line

How to prepare

Assemble the five inputs as one index with a date. If a document in it is more than a year old, check whether the product or the law has changed. Do this before touching the hazard table.
