Hazard analysis

ClauseUnchanged title; new Annex B supports the selection stepRetrieved 2026-10-19Last updated: 2026-10-19

The requirement that applies today

The food safety team carries out a hazard analysis to decide which hazards need to be controlled and how much control is enough. The current edition sets out the detail in subclauses: the general requirement, hazard identification and acceptable levels, the hazard assessment, and the selection and categorization of control measures. The draft contents name the parent clause and add an informative annex about choosing control measures.

What the draft does

Unchanged title; new Annex B supports the selection step: The public contents keep 8.5.2 at the same number and title and add an informative Annex B about choosing and categorizing control measures. The annex text is sold by ISO and not held here.

Why this clause matters

This is the technical heart of the system. The parent page shows the four steps together; the subclause pages carry the detail. The draft annex on selection is a signal that the OPRP and CCP decision is expected to be reasoned and recorded, not copied from a template.

Suggested evidence to discuss with your auditor

For 8.5.2, these are the artefacts we suggest discussing with your auditor. The standard publishes no evidence list, so this is our reading, not a requirement.

  • A hazard analysis with the method described and the reasoning visible
  • Acceptable levels with the legal, customer or scientific basis
  • The link from each significant hazard to a chosen control measure

Where systems usually fall short

  • A table of hazards with no reasoning about significance
  • A hazard analysis that has not changed despite a new line or supplier

How to prepare

Read the analysis as if you were the auditor: for each significant hazard, can you see why it is significant, what acceptable level applies and why that control was chosen. Where the reasoning is missing, add one sentence.
