The requirement that applies today
The organization establishes, implements and maintains a hazard control plan, kept as documented information. For every measure at a CCP or an OPRP it records the hazard being controlled, the critical limit or action criterion, the monitoring procedure, the correction if the limit or criterion is not met, the responsibilities and authorities, and the monitoring records.
ISO 22000:2018, 8.5.4.1 Hazard control plan: general; ISO/DIS 22000:2026, 8.5.4.1.
What the draft does
Subclause of 8.5.4; not listed separately in the public contents: The public contents name 8.5.4 at this position but do not list its subclauses. The subclause structure shown here comes from the held current edition; whether the draft keeps it is sold by ISO and not held here.

Why this clause matters
The plan is the operational document the line actually uses. If it is 80 pages in a quality office and the line has a one-page chart, the real plan is the chart. The clause lists exactly what the chart must contain, which makes it a good checklist for a transition review.
Suggested evidence to discuss with your auditor
For 8.5.4.1, these are the artefacts we suggest discussing with your auditor. The standard publishes no evidence list, so this is our reading, not a requirement.
- The current plan at the point of use, matching the controlled version
- Each of the six elements present for every CCP and OPRP
- Monitoring records that reference the plan and the limit
Where systems usually fall short
- A plan that lists limits but not the correction or the responsible person
- Different versions in the office and on the line
How to prepare
Take the plan to the line and ask the operator to show you the limit, the record and what they do if it is exceeded. If they need to fetch a folder, the plan is not implemented where it matters.
