Why this clause matters

Infrastructure is where food safety and capital planning meet. A failing chiller, a roof leak over a production area or an unsupported software system are all infrastructure issues with food safety consequences. The revision does not change the principle, and the transition may expose systems that are already at the end of their life.

Suggested evidence to discuss with your auditor

For 7.1.3, these are the artefacts we suggest discussing with your auditor. The standard publishes no evidence list, so this is our reading, not a requirement.

  • A maintenance and utilities plan with the food safety critical items identified
  • Records of maintenance, breakdowns and the food safety assessment of each
  • A list of software that supports monitoring or records, with its support status

Where systems usually fall short

  • Critical equipment maintained on a breakdown basis only
  • Spreadsheets and legacy systems holding food safety records with no support or backup

How to prepare

Mark the equipment and systems whose failure would affect food safety, then check the maintenance and support arrangements for each. Add the systems that hold monitoring records, because a record you cannot retrieve is not evidence. Put the food safety critical equipment on a separate maintenance list with a named owner and a spare-part note. When a chiller or a metal detector fails, that list is the difference between a controlled stop and a scramble.
