8.5.4

Hazard control plan (HACCP/OPRP plan)

ClauseUnchanged titleRetrieved 2026-10-19Last updated: 2026-10-19

The requirement that applies today

The organization establishes, implements and maintains a hazard control plan. For every measure at a CCP or an OPRP it records the hazard, the critical limit or action criterion, the monitoring procedure, the correction, the responsibilities and the records. The current edition sets out the detail in subclauses: the general plan, the limits and criteria, the monitoring systems, the actions when they are not met, and implementation. The draft contents name the parent clause.

ISO 22000:2018, 8.5.4 Hazard control plan (HACCP/OPRP plan); ISO/DIS 22000:2026, 8.5.4.

What the draft does

Unchanged title: The public contents keep 8.5.4 at the same number and title. The current edition numbers its subclauses 8.5.4.1 to 8.5.4.5; the public contents page prints the parent only. No change to the requirement is shown.

Why this clause matters

The plan is the document the line actually uses. The parent page is the index to the five parts; the subclause pages carry the detail. If the plan is 80 pages in a quality office and the line has a one-page chart, the real plan is the chart, and the auditor will read that.

Suggested evidence to discuss with your auditor

For 8.5.4, these are the artefacts we suggest discussing with your auditor. The standard publishes no evidence list, so this is our reading, not a requirement.

  • The current plan at the point of use, matching the controlled version
  • Each of the required elements present for every CCP and OPRP
  • Monitoring records that reference the plan and the limit

Where systems usually fall short

  • A plan that lists limits but not the correction or the responsible person
  • Different versions in the office and on the line

How to prepare

Take the plan to the line and ask the operator to show you the limit, the record and what they do if it is exceeded. If they need to fetch a folder, the plan is not implemented where it matters.
